Wooden Barrels Aging Balsamic Vinegar of Modena

Balsamic vinegar is made from pressed Trebbiano and Lambrusco grapes and then reduced by heat in an open vat for 24 to 36 hours.

The resultant “mosto cotto” is then aged in wooden barrels.

Each year, a certain percentage of the liquid evaporates producing a far more concentrated wine must. Roughly 1/3 of the wine must is transferred each year to a smaller barrel in the battery. Mosto cotto is then mixed with wine vinegar to produce most of the commercially available balsamic vinegar

The only way one can determine the quality of balsamic vinegar is to carefully read the label. Distinctive P.D.O. (“DOP”) and I.G.P. seals should be on the label of a bottle to ensure the authenticity of the product.

With the exception of the more expensive “Traditional” balsamic vinegar which consists of 100% wine must, it is wise to consult the label for any additives (there should be none) and, by all means, buy only from trusted firms.

With its agrodolce flavor, balsamic vinegar can be paired with almost any fruit.

Balsamic with Caprese Salad

While Caprese salad normally doesn’t use balsamic, we think it makes a great addition.

Balsamic over Fresh Salad

Who needs factory-processed salad dressing when olive oil and balsamic is more than enough?

Balsamic and Vegetables

We frequently use a splash of balsamic to accentuate the flavors of vegetables and meats.

With a viscosity level of 1.33, this rich Italian balsamic aged in wood casks pours like syrup rather than most commercial grade vinegars that rarely exceed 1.06.
Authentic balsamic vinegar consists ONLY of mosto cotto and wine vinegar. Beware of fruit, herb and even truffle additives that generally mask inferior quality vinegars.
A quality balsamic vinegar enhances the flavors of salads, roasted vegetables, meat, pasta and even ice cream. Paired frequently with Parmesan cheese and mozzarella.
